Hot and sour soup

As the name shows, the soup is hot and sour. In each Chinese restautant in America, there must be a hot and sour soup. But make a good taste soup is not that easy, it needs more materials than nomoral soup, and the cooking time need to be exactly accounted. This soup helps stomath work well , and also disolve ingredients quickly.

Material: Tofu, green onions,fungus, mushrooms, eggs, starch.chicken brest.
First step: Cut tofu, fungus, mushroom, and chicken brest into stripes.
Second step: Add first step materials into water, and boil them.
Third step: Add mist eggs and starch into second step.
Forth step: Boill them again, and add vinegar, salt,green onions into the soup.

It seems easy, but the third step need to be more careful.
Tips: when 90% of scond step has been done, add eggs and starch quickly. Turn the fire to lower level, and mix them well. Then boill them again. Venegar and salt depend on personal favor.

Grilled Fish

Fish is a very delicious and healthy food. I am going to introduce a easy simple but taste good way to cook fish. I believe everyone's home has a oven, so only thing to prepare is to buy Swai fish in Walmart!.This dish is not a traditional food in China, not every body has an oven in home ususally.So for your convience, I made this dish for American. Different style different taste.Hope you will like it!

Materials: Swai fish, cumin, pepper, chili, Lettuce, honey.
Step 1: Put some lettuce on bakeware, and then swai fish. If you like to cut fish to pieces, you can do that. But if you feel so difficult, the whole fish will be still fine.
Step 2: Spray oil, cumin, chili, and peper on fish skin. Mix honey with soy sauce, spray both on fish.
Step 3: warm up oven to 200-250 degree. Put your fish into oven for 20 minutes.
Step 4: Do step 2 again to your fish, and grill fish for 10 minutes.

Whole process is 30 minutes around, not too long. You can do anythings among these time. It is ready to serve!

Summer Mung bean cold drink

This is a very delicious and healthy drink in China. Easy to make and keep you away from summer. Ice water or soft drink can make you cool down but sometime it is too boring to drink, also soft drink will gain weight. This mung bean drink is different from drinks in market. Its ingredients can balance your stomach heath and also cool down. When I was in China, my parents always make this for me in summur, and if you are on diet, just chose this as your main meal, low fat and colories will keep you fit and beautiful.
Materials: Mung bean, water, sugar.
Step one:  Mung bean: water1:8. Middle heat to cook water and mung bean about 30 minutes.Until bean completly boiled.
Step two: Using Mixer to break mung bean and water together to thick like.
Step Three: Boil mung bean and water again.
Step: Pull out Mung bean and water, mix it well, and store it into regrige.
You can add sugar if you like, but on diet people, not add too much sugar is the best for your meal.

Sweet shrimp asparahus

This dish is a new dish I leared from my friends' mother. It taste sweet but a little sour. Combine with asparahus, it balance ingredients and nutrition.
Materials: Uncooked Combo shrimps, Tailand sweet sauce, asparahus.
First step: Add a spoon of salt into water.Boil asparahus and shrimp until shrimp change white to red.
Second step: Dry shrimps and put into pot with hot oil. Add green garlic and garlic into pot.
Third step: Add a little soy sauce and a certain mount of Tailand sweet sauce. Make sure shrimps can all be coverd by Tailand sweet suace.
Last step: Ready to serve!

It is very delicious and fresh to cook when you have limited time. Hope you can enjoy it!

Fried tomato and eggs

This dish is one of my American friends' favorite.It tastes a little sweet and salty.With tomato and eggs, it gives a good nutrition. Easy cooking and good looking.
Materials: 4-5Fresh tomatos, 2 eggs. 2 big spoons sugar, and 1 spoon salt.

Step 1: Mix eggs well and cut tomatos like in photo.
Step 2: boil oil and melt sugar in oil.
Step 3: Fry eggs until eggs turn to yello. Quicly add tomato and fry them together.
Step 4: add a little sault or soy sauce .Then it already can be served.

Sushi

Sushi is a tradional Japenese food which is well know. It is cute and simple to eat. People has already recognized this food as a symbol of asian food. There are many flavors , but seafood is the main character of sushi. Crab, shrimp, simon, and other fish make sushi more beautiful and colorful. Sushi is the combination of Japenese rice and vegetables.  Flovars are depend on personal taste. Although sushi seems like very easy to make, techonology and skills are required.
I made sushi this weekend, and I feel it is very fun when you finish these steps. However, first time making sushi is very difficult to control all over.
Materials: Japenese rice, laver, rice veneger, sesame, soy saouce, crab, shrimp. (all sell in Walmart) Sushi maker bamboo (sell on Amazon.com)
Step 1: 1 spoon rice veneger, 1 spoon sugar, and 1 little spoon salt . All mix to 220 grams rice. Seam them well.
Step2: when rice is cold down, pave laver in bamboo, and then pave rice upon to laver.
Step 3: add little crab, shrimp, or other vegetable you want to eat within sushi. But remember, do not put in too much.
Step 3: Roll up all tidely. This is the most difficult step. Maybe you cannot roll very tidelly that will affect taste. This step need practice.

So, sushi is alreayd to be served.

Dumpling

I made this dumplings by myself. This is a very traditional main food in north China. When we have new year, we will eat dumplings which means we are together. Because flour wrap meat inside, that tells a family is whole together now at this time. So dumplings still remain today.

Dumplings making process:
1. Mix flour with water well. flour :water 2:1.
2. Chopped meat, add salt, potato flour, green onion,some cabbage.Mix them well.
3.  first step flour wrap a little meat inside, and make sure the meat completely incase.
4. boil water, and put dumplings into the boiled water. When dumplings can float above the water, everything is already.

Hot fish

This is a Szechuang dish names Hot fish. Fish and hot chili oil are the main material for this dish. Making this dish, You only need to do two steps. Hot fish comes from a history. A cook went to a competition, he used a new cook way to make "hot pork" first. This dish was very special, pork tastes fresh and spicy. Because the weather is cold, people like to add chilli to warm themselves.After this guy won this competition, one of his friend came by and brought a fish. This cook thought why not a "Hot fish"? So "Hot fish" and "Hot pork" are created . People in China whereever they are, all familar with thoese dishes.
Materials: fish, red chilli, green onion, water, sault.
Fitst step: Cut fish pieces, and boil a pot of water.
Second step: Add salt, red chilli, sault and fish into boiled fish. Until fish turn to white. You are ready to go.

Banana desert

This is Banana Dersert. Outside is sugar cloth and inside is banana. This desser is not that easy to cook, you need patient and time. In order to make taste like crispy but also soft. We need to do multiple steps.


First step:   Mix flour and egg together. Do not add water, if it too dry, just add another egg.

Second step: Cut 2 bananas like picture. Mix banana with first step well.

Third step: Heating oil , and cook banana in step two, until outside of banana become crispy.Then take them out.

Fourth step: Using another new spot, and heat oil with small fire, add 6 spouns sugar inside. Only cook in small fire, untill sugar turn to caremal color.

Final step: Mix step three and step four together, then this desert well done!

If you like, you can add sesame on top. May first time you will fail, but do not worry, I always fail several time. But I believe practice mt.akes perfect.

First dish.

My first dish is Kung Pao chicken. The name of this dish comes from a guy who names Ding Baozhen(1820-1886). He served as head of Shangdong Province. His title is Kung Pao. So that's why we call this dish Kung Pao chicken. Main material to prepare this dish are Dry red pepper(which can be bought in Chinese Super market), garlic, shrimp,chicken, soy sauce, and green onion.

First step: Fry garlic, red dried chili,and  half of green onion you prepared with vegetable oil.Until you can smell it.
Second step: Put in chicken pieces and fry them together.Until chicken turns to white.
Third step: put in shrimp and add soy sauce, salt
Final step: YOU DONE! spread remained green onion on top of your dish.


Is this really easy? If you cannot make that good, you may try to add some other Chinese Szechuan sauce that can also be found in Chinese super market. Hope you can success.

First post for English 304 (Cooking Chinese Food)

I have been USA for several  years, but this is the first year I begin to cook at my department. Before that, I never tried and afraid to cook because of boiling oil, dirty dishes, and complex steps. I used live in dorm and eat at dining hall. Moving out forces me to cook by myself. So I decide to report my "grades" on cooking.
This is an introduction. Chinese food are far more mass than American food. Hamburgers and french fries full fill with fats that less nutrition.  Eating salads make me feel like a rabbit! I do not really know why salads exist in the world.(Easy to cook?) When I ask Americans what foods are American tradition. They said actually they do not even know.
Chinese food is popular in America, but also taste like shit. MEN! THAT'S NOT CHINESE FOOD, OK?!
 I never see American Chinese food in China ,such as Sesame chicken. So, from now, I decide to revolve American Chinese dishes by myself, although I am new. At least I know what they taste like.
